    *WINE CLASSES IN DUBLIN & SAUSSIGNAC In these two hour wine-tasting classes Caroline covers the basics of wine-tasting (including how to tell the age of a wine and how to assess a wine), the French appellation system and how to find French wines that you like. When it comes to wines of France some wine knowledge can make all the difference because of the ancient appellation system. The classes are €15, Friday May 23rd and Monday May 26th 5.30pm to 7.30pm in Dublin 2. The price includes six wines tasted and a pocket guide to French Wine appreciation. Caroline offers her Introduction to French Appellations here in Saussignac every Tuesday morning 10-12 for the same price.     Chateau Haut Garrigue Sauvignon Blanc up close Chateau Haut Garrigue has been a wine estate for centuries. The date etched above the cellar and original buildings is 1737. The name can be found on medieval maps of the area. ‘Garrigue’ refers to the herbal mix (lavender, thyme, fennel, rosemary) that naturally thrives here. We continue to nurture this wild earth with organic farming practices. Garrigue's vineyards follow the contours of the beautiful Dordogne valley - the cradle of European civilisation.

    In 2005 we left our city jobs to pursue the dream of producing fine wines from small high-quality individual parcels. Chateau Haut Garrigue offers excellent terroir, the right mix of grape varietals (merlot and cabernet sauvignon for our wonderful rich reds and rosé, sémillon and sauvignon blanc for our delicious whites) and old vines. We grasped the opportunity to follow our dream and to return to our roots (we both come from farming families). We invite you to discover more about our Wild Earth Wines, the Grape Escape (our self-catering house), our vineyards or to shop online.
